Essential Missing Ingredient - It's not the salt! While the amuse bouche of Celriac Veloute with its hint of truffle oil, was a great start, I did use a spot of pink salt to make it perfect. The Entree of "Fennel cured tartare of rainbow trout" seducing my trained chef's palate, was followed by the baby snapper fillet with chorizo stuffed squid - so tender. My dessert choice - Chocolate fondant, chocolate delice, chocolate sorbet, Seville marmalade jelly croquante... a plate of mouth magic.
What is the serious, superb food with serious faces? A good dollop of country warmth please Empyre! In a town where folks nod hello and show natural friendliness and approachability, it was 'a smile' that was the missing ingredient. Empyre, add a little 'teeth sparkle" to the dining experience, just like your elegant chandelier adds ambience to the room. I had earlier dismissed a local residents comment about Empyre "not very friendly" staff. Only to leave echoing her lament. It's called the Hospitality industry because it's a 'people' business not simply a 'food' business. Still... I'm looking forward to another helping of the "Fennel cured tartare of rainbow trout".
