Phoenix Brewery Overview

In central Ballarat opposite the university campus is the historic Camp St Arts Precinct and the home of Phoenix Brewery. Chairs and tables spill out from the footpath full of alfresco diners with Pinot Gris in their grip, leaning on the wide open gabled windows. When the weather is brisk, the interior is warm and welcoming and includes a modern downstairs area with private bar and bluestone cellar – a preferred function area (bookings required) also known as the Cellar Tapas Bar, open to the public later in the week. Seasonal menus feature fresh regional produce and a modern fusion style influence, expressed in such dishes as roasted breast and confit leg of poussin with seared foie gras, bacon cream, petit pois and orange jus.

Travis Ray first started in the kitchen at The belltower Inn (1999) as a kitchen hand, before moving to Daylesford to continue duties as a kitchen hand at the Lake House (2001). Showing dedication by turning up to every shift wearing a chef's uniform he quickly got promoted to prep jobs instead of washing dishes. When the opportunity arose to take on an apprenticeship Travis jumped straight into the position, working for five and a half years under the watchful eye of Mathew Macartney. Travis moved through the ranks up to a chef de partie level, before he made the choice to experience the UK for 18 months, working within 2 AA Rosette establishments at Alexander House Hotel, Turners Hill and Babylon restaurant Roof Gardens Kensington.
Upon returning to Australia in 2008, Travis once again teamed up with Mathew Macartney, but this time he was by his side as Sous chef at Eleonore's restaurant Chateau Yering Historic House Hotel Yarra Valley. In his time at Eleonore's the team maintained one chef's hat in The Age Good Food Guide (2010, 2011), Restaurant and Catering Australia Victorian branch award for Best Modern Australian Regional and nationally at the Savour awards (2010).
Now Travis is the chef and proprietor of Phoenix Brewery and looks to the future, challenging himself and his team to create the prefect dining experience for locals and tourists alike.
"My goal is to cook with the freshest, seasonal produce. Whilst sourcing as much as possible from local and regional producers, helping to showcase what the Ballarat and districts have to offer."

After dining at Phoenix previously when visiting Ballarat we were excited to try the new menu. We started off with the Quail for entree..... Amazing!! Continued with the beautifully moist chicken, set off with a delicate velvety sweet corn puree for main and we finished with the Coffee Crème Brule & the Apple and Chestnut pudding for dessert. Top marks to the chef and staff, It was an amazing meal with excellent service and we will most certainly be back on our next visit to Ballarat.
