Appellation at The Louise is highly regarded as one of Australia's finest restaurants, led by celebrated chef Mark McNamara. His dishes change daily as dictated by produce availability and guest requirements. Their menu is designed with distinguishing features:

- A total reliance on and a showcase for local and South Australian ingredients
- All dishes are designed to be wine friendly
- Menu items are not divided into courses rather items are listed in order of richness
- Our "signature" wine flight menu starts with the wines for which dishes are created

With a passion for real, fresh local ingredients, Mark and his team are guided by the rhythms of the seasons - harvesting from their kitchen garden, baking their own breads, butchering and curing their own meats.

They see wine as the most natural of partners and have been awarded for having South Australia's best wine list which features around 500 selections including an outstanding museum list of the Barossa's most iconic wines.

MORE ON OUR SIGNATURE DISH: Thin slices of butter poached Barossa corn fed chicken with Linke's lachs-schinken, garlic and sage.

Thin slices of local corn fed chicken breast are gently poached in butter that has been infused with fresh garlic and sage. Served on roasted root vegetables the chicken slices are layered with paper thin slices of "lachs-schinken" (a traditional speciality of the Barossa - a fine, silky, raw smoked ham prepared from the loin) and dressed with a reduced glaze of chicken and verjus enriched with butter.
