Most alluring of all are Cameron Matthews’ seasonal European inspired dishes, which blend classic technique and the finest local produce with exquisite results. The likes of Hervey Bay scallops with fermented rhubarb, buttermilk and dulse oil may be enjoyed a la carte, or as part of a tasting menu or chef’s table experience.
